speaking of cold and sleepy, this breakfast is dedicated to her. cold and sleepy is a fellow parent and ppker--and i think she's the cats' meow. this breakfast gig is super simple to make. just take any ol' vegan waffle recipe and add 1/2 t. cinnamon, 1/4 t. ginger, and 1 peeled shredded apple of your choice to the mix. follow the waffle maker's instructions gosh darned it, or you'll just be sad--which is no way to spend a sunday morning. for the caramel sauce get yourself 2T of EB, about a 1/2 cup of vegan brown sugar, just a smidgen of soy milk, a few vegan marshmallows, and a heaping teaspoon of smooth-(or hell, chunky if you're living on the wild side) peanut butter. let that stuff get gloriously melty on low heat, and pour it on your finished waffles. slice up a few apples while yer at it--they're great for dippin' in the sauce! i'm a cashew hound, so i only saw it fit to top the waffles with a handful of them.
brew some nice black coffee-(the sauce is so sweet you won't have to add anything to it but creamer) and you have a little slice of heaven.

These look amazing, too. I have to admit that I am REALLY feeling the apples this year, though, so anything apple looks incredible, ha ha.
