...when you make them they **POOF!** disappear. this is a money shot of the coconut magical cookie bars from vegan cookies invade your cookie jar. they were awesome--yet another fancy cookie that you can feed your omni friends to show them that vegan cookies are just as every bit as good -(if not better) than their regular ol' cookies. i assumed the condensed milk base would just be soy creamer, but was pleased to find out that it actually is from coconut milk, so these bars are super coconutty and yummy.BTW--i want to apologize for the non-vegan ads on my blog. i'm in negotiations with foodbuzz to find out if there's anything i can do to keep non-vegan products popping up on my site. chicken? eeew.

That looks absolutely mouth watering! I've been meaning to pick up this book for far too long and I think this may have just convinced me. Cookies made with coconut milk? Sold!

I tried making these and they weren't really structural at all. (You couldn't pick up a bar.) What was the consistency of the coconut milk+sugar supposed to be?
Alternately, do you want to bake some for me to feed my friends as bribes?
Oh, these look so good!! I have made similar bars by just by adapting a recipe for the traditional "7 Layer Magic Bars" and replacing condensed milk with coconut milk - I was glad to find out that it worked out so nicely.
I haven't seen this cookbook yet, but I love the Vegan Cupcakes Take Over the World (and their "regular" cookbooks, too), and have been meaning to get this one as well.
