spring in the wintertime-(some assembly required)

wintertime has me down, so i thought i'd make spring come a little early.
i took some rice paper wraps, baby spinach, shredded carrot, avocado slices and bits of seitan sauteed in mae ploi sweet chili sauce and peanut butter.
this is how i roll. the photo is blurry because i move so fast!
see, i'm already rolling another one. they see me rollin' they be hatin'.
finished product. now, they're not the prettiest spring rolls on earth, but they were dang tasty. remember the combo: baby spinach, shredded carrot, avocado slices, and seitan sauteed in sweet chili/peanut butter. squeeze some lime on the rolls once done and serve with some soy sauce and sweet chili sauce for dippin'.

LOVE making rolls with rice paper..These sound completely amazing.. I like that they aren't perfect.. so is the way of everyday life! I actually made some rolls this week with some shredded "coleslaw" mix that I dressed with my pineapple vinaigrette and rolled with some raw collards. Yay for some new fillings!

Money. I had my first rolls on New Year's Eve, and now I need them constantly.

oooo, i love me some spring rolls. i rarely deviate from my recipe, but yours sounds too good not to try!

You must have read my mind because I'm making something just like this for dinner tonight. I'm craving it like crazy! But I haven't been able to find rice paper rolls, so mine will be wrapped up in spinach. Oh well, hopefully it will still be tasty.
