Happy MOFO Day! Day 1


happy vegan mofo day! for those of you vegans who live in a cave, or my beloved omni friends who don't know what the hell vegan mofo is, lemme tell you: it's the vegan Month Of FOod. us foodies blog about all the awesome stuff we eat while being vegan because it is common knowledge amongst us vegans that outsiders are convinced we're flaky because we don't get enough protein, we're overbearing pains in the ass because we're so "picky" about what we eat, and we must sustain ourselves on cardboard and dirt because that's what vegan food is supposed to taste like.

WRONG! i think i have way more choices being vegan and more license for creativity. point in case--these waffles. granted, almost all my waffle pictures look roughly the same-(as do my pancake pics), but each breakfast delight carries an explosion of flavor. AN EXPLOSION!

i came up with this looking at ingredients in my pantry, fridge, and freezer thinkin' what can i do with THIS, and how in the heck can i sneak veggies to my stubborn toddler? aha! behold the recipe for these carrot coconut ginger waffles:

carrot coconut ginger waffles (PLEASE make these and tell me whatcha thank)

  • 1c flour
  • 1/2 c. oats
  • 3/4 t cinnamon
  • 2t baking powder
  • 1/2 t salt
  • 1/2 c. creamer-(i used mimicreme)
  • 1 c. water
  • 3/4 c or 1 jar of baby food carrots (or you can just roast and puree your own, i don't care)
  • 1/8 c. shredded carrot (for texture!)
  • 3/4 c. shredded coconut ( i used sweetened-whatever floats yer boat)
  • 1/2 T. FRESH grated or shredded ginger
mix all that shit together while heating yer waffle iron. pay attention to the manufacturer's instructions, as they often vary. once you have a waffle iron waffle, you'll never eat frozen ones again. this makes 6 waffles. i highly suggest topping them with a dollop of vanilla frosting, but you can use whatever you want. i think this recipe could use some tweaking, which is why i want y'all to try this for yourselves. raisins or nuts would probably be nice. i thought they tasted like cinnamon rolls.

  1. Jen, these look awesome! Would they work ok as pancakes? I'm adding waffle maker to the list of small appliances I want, along with bread maker and food processor!

  4. Love waffles. Carrot coconut ginger waffles look delicious! Really need to procure a waffle iron.
