I heated about 1/3 cup of oil in a saucepan and slowly added 1/2 cup of flour. Then you just stir continuously until it thickens and turns dark brown (about 15 minutes). It adds thickness and awesome flavor since the flour gets toasty. BTW, if your mixture thickens to a paste, add a little more oil. It should be stirrable the whole time.Biancahttps://www.blogger.com/profile/11545245728462853370noreply@blogger.comtag:blogger.com,1999:blog-1508221488838914233.post-40615702760959102412009-02-02T17:42:00.000-05:002009-02-02T17:42:00.000-05:00P.S. It's probably a good thing that there aren't any Lebanese buffet places around here, or I'd likely kill myself on falafel and mjadra :) Mmmmmmmmmm

And good luck with the doughnuts!Chelseahttps://www.blogger.com/profile/16823654822842230371noreply@blogger.comtag:blogger.com,1999:blog-1508221488838914233.post-62592549177299047422009-02-02T16:34:00.000-05:002009-02-02T16:34:00.000-05:00The food looks really really good. I don't get it? I thought maybe it was the oil, but I tried that in my own personal last batch and I just ended up with oily hummus. Hmmmmm...must be magic beans.Anonymousnoreply@blogger.com
